Guitar Freaks (http://www.gamespot.com/ps/action/guitarfreaks/index.html).  Check out the screenshots.  I don't know why, as I never played the game, but this just gives me wave after wave of 90's nostalgia.

One of my friends owned that game and I used to play the hell out of it, especially when he let me borrow it.  It was really good for its time.
