Than god games like Metal Gear 2 were released on DVD and not BluRay.

This is the same thing that happened with the PS2 was released with DVDs. Developers were like, "Wow, that's a lot of space!" They then proceeded to just not compress anything because there was no need to. Same thing here, I imagine.

Keep in mind that coding for the PS3 is an absolute bitch from what I've heard. That Cell processor, while powerful, is terribly difficult to code for.

Theres a lot of new texture and model compression technologies that are still in the works and probably haven't been implemented in these games yet. As compression technology gets better, developers are going to have a hard time filling up that space until the end of the PS3's life.
Also in regards to what JB said, the coding might be difficult now, but that will get better over time, the PS2 and its Emotion Engine had similiar coding problems when it first came out but now that is pretty much a null and void issue.

Its the multicore stuff. And the PS3 has like 7 CPUs in it.

Wow. I thought the the 360 had 3 and the PS3 had 1.
Also the 360 looks tough to hack so far. It was designed in such a manner, that it is really difficult to open and work on. The software hacks aren't that great either.
I wonder if the PS3 will be the same.

No. They figured out how to use the expansion port to hook up some sort of external device.
