Strange. I wonder if this is a Valve thing again like it was with EA.

How weird. I would venture a guess as its an issue Valve has with something Ubisoft is doing. I think Ubi would still want their games on Steam is they could.

I'm guessing its a similar situation where Valve doesn't like UbiSoft selling items in game without getting a cut or something.

On the bright side, they were not available for pre-order on Steam yet for me. They were all just listed as "Coming Soon." I don't think anyone was even able to pay for them.

IGN -> Rumor has it UbiSoft and Valve were disagreeing over the regional pricing over Steam, so that's why their newest games have been removed from there. (http://www.ign.com/articles/2014/11/06/far-cry-4-assassins-creed-unity-the-crew-not-available-to-purchase-on-uk-steam)
We'll have to wait and see if anyone talks on what happened and where things go from there...

If this really was the case, good on Valve for sticking to their guns. Ubisoft sucks donkey balls when it comes to regional pricing (much like EA).
Assassin's Creed Unity Standard (for some reason they've named it "Special Edition" probably for pre-order tantalization purposes) costs 60 Euros (~$75 USD). It costs $60 USD everywhere else.
They can't seem to grasp the concept that 1 Euro ≠ $1 USD. Then they complain about how PC titles aren't selling very well.

I just checked - looks like FC4, The Crew, and ACU are back up on Steam here in USA.
Can't speak for other regions here.
